**One practical tip:** Book a table at a neighbourhood restaurant in the Écusson, the medieval centre, on a Tuesday or Wednesday evening. January is when locals actually eat out without occasion, and you’ll see exactly what this city is like when it’s not performing for visitors. That’s worth the trip on its own.
